RECIPE: Braised Rabbit with Chestnuts
Serves 6
·1 tbsp olive oil plus extra
· 1/2 cup diced pancetta
·30g butter
·12 golden shallots, peeled
·6 tbsp plain flour
·salt and pepper
·2 rabbits, jointed by the butcher into saddles, fore and hind legs*
·500ml chicken stock, heated
·250ml pinot noir
·3 tbsp fig vino cotto**
·1 cup new-season chestnuts, scored, roasted and peeled
·1 bunch baby carrots, topped and scrubbed
Preheat oven to 180C. Heat the olive oil in heavy-based saucepan, over medium heat and add pancetta. Cook until the pancetta has released its fat content and has become crispy (5 minutes). Remove the pancetta and reserve. Add the butter and shallots and cook until golden. Remove the shallots and reserve. Dust the rabbit pieces in seasoned flour then add oil to the pan, as needed, then seal each portion of rabbit before removing from the pan. Tip in hot stock to deglaze the pan then add the pinot, fig vino cotto, rabbit, shallots, chestnuts and carrots. Cover the rabbit with buttered baking paper, put a lid on the pan and place in the oven for 1 1/2 hours or until the rabbit is cooked to tender. Serve with celeriac and parsnip mash and steamed greens.

Hello
I was on holiday in France last week and the local baker does a daily special depending on how he feels and what he has available.
One day he produced a small loaf made with Chestnut Flour and Figs. He had snipped the top with scissors so that the spikes stood up. Would have a picture but didnt have my camera and it didnt last long anyway. I thought I could pick up a recipe back in UK off the internet but so far not found one with the combination of Chestnut Flour and Figs.
I am trying to pull a recipe together and the best I can come up with is PRs Celebration Bread recipe with a 20% substitution for Chestnut Flour plus figs.
Anyone already done this and care to share?
