The South Beach Diet has been a hot topic since it was first published in 2003. The author, Miami cardiologist Dr. Arthur Agatston, says his goal in developing the diet was to help his heart patients improve their cholesterol levels. When he noticed many of his patients on the diet were also losing weight, he decided to take it to the masses and publish a book. The diet program has three phases. In Phase 1, which lasts anywhere from two to four weeks, you banish your carbohydrate cravings and lose the most amount of weight. Carbohydrates are dramatically limited to reduce cravings. You are prohibited from eating grains, sweets, dairy, fruit and alcohol. In Phase 2, you gradually add some of these banished foods back into your diet in limited amounts until you reach your goal weight. Phase 3, the maintenance phase, allows more of the forbidden foods, emphasizing good fats (healthy oils) and good carbs (whole grains). Lean meats, poultry, fish, eggs, nuts and vegetables are the mainstay of the diet during all of the phases. Since the release of his first book, Dr. Agatston has published many more, including cookbooks, a dining guide, a book focused on good fat and good carbs and one targeted to chronically overweight heart patients. His latest, South Beach Diet Supercharged, is a revamp of the original that allows some extra foods and includes 20 minutes of interval training daily. To further help dieters adhere to his diet, Dr. Agatston has also developed a line of foods with the desired ratio of carbs, protein and fat. Few can pass by this book, first published in 2005, without taking a second look. The sassy cover, with a cartoon picture of a curvaceous woman with a tiny waist and oversized sunglasses, promises a “no-nonsense, tough-love guide for savvy girls.” If you can get past the profanity and brazenness — the authors say things such as “Don’t be a fat pig anymore.” and “Stop being a moron and start getting skinny.” — you will find a book that promotes veganism. It bashes the government and food industry, using graphic descriptions of how animals are treated before they are slaughtered and what goes on behind the doors of food-processing plants. The book promotes organic fruit, veggies, whole grains, soy, legumes and water. I'ma big fan of Italian food. Jim: Probably waffles, bacon & eggs. A lot of carbs and a lot of sugary syrup and then your protein. And for a beverage, you better have a couple of Gatorade's to put some electrolytes back into your system.

I totally forgot my waffle iron didn't work and tossed it out. So I opted to try to make some low carb pancakes instead. I used 1 scoop vanilla whey protein, 1 egg, 1 tbsp of heavy cream, 1/4 tsp baking powder, and a few drops of liquid splenda. If they weren't so dry I think they would of been okay. Definitely something I would only make a few times a month haha. I used Walden Farms 0 carb Maple Syrup. I love the stuff & it actually tastes great. I really think the waffles will turn out way better then the pancakes I made, since there is cream cheese in the waffles and you beat the egg whites. I bet they are fantastic with whipped cream & strawberries or raspberries, but I have not moved up to Rung 4 yet.
