Before opening their Casa chain of Italian restaurants, Thomas Casaburo and Jimmy D’Angelo studied restaurants in the famous St. Louis Italian area known as The Hill, where some of D’Angelo’s family ran restaurants.

When they returned to the Summit City, one of the ideas the trip spurred was a simple salad with greens, chopped red peppers and green onions, a blend of five cheeses, homemade croutons and a zesty, somewhat creamy dressing.

Today, that little salad is the hallmark of the restaurant chain and easily the most famous salad in Fort Wayne.

“As is the case with most businesses, ideas (aren’t) always made from scratch,” said Thomas Parisi, Casa’s director of operations."For nearly 35 years we have built our reputation around the salad. This is our signature. "

Last year, the restaurant said it sold 266,350 side salads, 125 958 small salads, salads 88,130 15,250 large pots and salad restaurant in the four stores.

Signature dish, indeed.

It has changed little since its inception. The original, Parisi said, was also supplemented with bacon. In the early 90s, they began to use the bits on the side, because so many people have asked for the salad without them. Now the bits are gone.The dressing has changed in terms of its availability in 1993, as many restaurants were trying to imitate it - many still are - and there were so many recipes floating around pirated.

"We just got tired of people posting the wrong recipe online, and (publications), so that's when we decided to bottle," said Parisi. "We actually have regular guests that we send it to the national level."

The iceberg and romaine lettuce used to make is to buy Casa No. 1 to produce more than 200 cases per week.

"It can be difficult with seasonal changes to ensure that we get good quality ingredients," Parisi said, "but we really stay focused on it because we can not screw up our signature item.
